some important female scientists / mathematicians / inventors are not given mention in didactic books, but should? I really think it's unfair to systematically exclude females from books students see, because a lot of people seem to look no further than them, making them think women never did anything (as if women's traditional role was nothing, hpf, why don't they try to keep a house and raise the family?).
I don't think there's any reason to not mention: Hypatia of Alexandria, Maria Gaetana Agnesi, Sophie Germain, Maria Montessori and Emmy Noether. What about you?

Elderly male scholars and 'didacts' have traditionally been dismissive of female achievements and tended to ignore them.

There are plenty of unsung figures throughout history (both male and female). Why do you assume that a lack of recognition only happens to women? For example, can you name one person in history that has been awarded the Medal of Honor? (Most people can't.)
As for the books students usually see today, I think it's an example of how our educational system has taken a turn for the worse.
